Zero Calorie Pasta
Zero calorie pasta, too good to be true?
I found these noodles called “Miracle Noodles” and they contain 0 calories!
While it’s not identical to pasta, it’s pretty dang close.
The noodle is made up of a vegetable called Konjac.
This vegetable is extremely rich in dietary fiber and has many health benefits.

I use these noodles for pasta, pad Thai and my new favorite is chicken noodle soup.
Chicken Noodle Soup
Ingredients:
- 2 tablespoons olive oil
- 1 cup carrots, peeled and sliced thin
- 1 cup celery, sliced thin
- 1 cup yellow onion, peeled and diced small
- 2 garlic cloves, minced
- 64 ounces (8 cups) low-sodium chicken broth,
- 2 bay leaves
- 1 tsp fresh thyme
- 1/2 teaspoon dried oregano
- 1 tsp pepper
- 1 bag of Miracle Noodle
- 2 cups shredded cooked chicken
- 1 T lemon juice, optional
- Sea salt, to taste
Directions:
1. In a large pot add oil and heat over medium-high heat.
2. Add the carrots, celery, onion, and sauté for about 7 minutes, or until vegetables begin to soften.
3. Add the garlic and sauté for another 1 to 2 minutes.
4. Add the noodles and boil mixture for about 10 minutes, or until noodles cooked through.
5. Add the chicken broth, bay leaves, thyme, oregano, pepper, and bring to a boil.
6. Allow mixture to boil gently for about 5 minutes or until vegetables are fork-tender.
7. Add the chicken, parsley, lemon juice and boil 1 to 2 minutes, or until chicken is warmed through.
8. Then, taste to see if salt is needed.
